This can be used for breakfast, dessert or a snack. There are many combinations you can try and add. If you prefer more liquid, use coconut milk, if you prefer it thicker, use coconut cream. You can get creative with the ingredients you use. 

 

  • Serves: 2
  • Prep time: 5 minutes
  • Cook Time: 5 minutes + time in the fridge

Ingredients

  • 400ml coconut milk or cream
  • 4 tablespoons of chia seeds
  • 2 tablespoons of pepitas
  • Handful of berries
  • 1 tablespoon of cocoa powder

Method

  1. Place all ingredients into a bowl and mix together
  2. Cover and place in the fridge for a few hours. You may need to stir it 5 minutes after being in the fridge to ensure the Chia seeds don’t go to the bottom.
  3. Serve and enjoy
