Ice cream is one of my favourite treats. This is a great alternative to sugar loaded ice creams and is super easy to make.
No ice cream maker is required, just a blender.
You can use different berries, smooth or crunchy peanut butter or even dark roasted.

This recipe is a modification taken from ‘Wholesomeyum’.
Ingredients
- 400 ml full fat coconut milk
- 130 grams 100% peanut butter
- 73 grams coconut oil (measured solid, then melted)
- 22 grams cocoa powder
- Pinch of salt
- ½ cup frozen berries
Method
- Place all the ingredients (except the berries) into a blender and puree until very smooth.
- Pour mixture into a 2-litre freezer safe container. Add in the frozen berries and mix through.
- Cover and freeze for 30 minutes. After 30 minutes, take it out and give it a good stir.
Place it back in the freezer and let it set for a further 3.5 hours.
