Ice cream is one of my favourite treats. This is a great alternative to sugar loaded ice creams and is super easy to make.

No ice cream maker is required, just a blender.

You can use different berries, smooth or crunchy peanut butter or even dark roasted.

  • Serves: 6
  • Prep time: 5 minutes
  • Cook time: 4 hours

This recipe is a modification taken from ‘Wholesomeyum’.

Ingredients

  • 400 ml full fat coconut milk
  • 130 grams 100% peanut butter
  • 73 grams coconut oil (measured solid, then melted)
  • 22 grams cocoa powder
  • Pinch of salt
  • ½ cup frozen berries

Method

  1. Place all the ingredients (except the berries) into a blender and puree until very smooth.
  2. Pour mixture into a 2-litre freezer safe container. Add in the frozen berries and mix through.
  3. Cover and freeze for 30 minutes. After 30 minutes, take it out and give it a good stir.
    Place it back in the freezer and let it set for a further 3.5 hours.
