This is one of my favourite low carb breads.
It has the texture and taste of traditional bread and is perfectly grain free, gluten free and delicious. Use it for all your bread needs.
This recipe is a modification taken from ‘Sugarfree Londoner’.

- Cook time: 45 minutes
Ingredients
- 250g Full Fat Greek Yoghurt
- 3 eggs
- 1 cup almond meal
- 2 tbsp coconut flour
- 1.5 tbsp psyllium husk powder
- 3 tbsp chia seeds
- ½ tbsp baking powder
- ½ tsp salt
- 2 tbsp sunflower or sesame seeds
Method
- Line a small loaf tin (450ml) with baking paper.
- In a bowl, mix the eggs and Greek yoghurt until smooth.
- Add the almond meal, coconut flour, baking powder and salt. Mix until combined.
- Add the chia seeds, psyllium husk and sunflower or sesame seeds and mix until combined.
- Pour mixture into the loaf tin and let it sit for 15 minutes so the psyllium husk and
chia can absorb the liquid. - Bake at 170 degrees Celsius for 45 minutes or until the top is lightly browned and a knife inserted comes out clean
