When I first read this recipe from Maria Emmerich, my first thought was, ‘hmmm… interesting.’
However, I thought I’d give it a go, and happy I did, as it’s surprisingly delicious.
It is an excellent way to get eggs into the kids and keeps in the fridge for up to 4 days, which is great for meal prep. Key tip is to prepare it the day before and let it set in the fridge overnight. This recipe is taken from Maria Emmerich.

Ingredients
- 10 hard-boiled eggs
- 1 can coconut milk
- ½ cup of sweetener such as stevia – I don’t use sweetener, however you can add and adjust to your liking
- ¼ cup unsweetened cocoa powder
- 2 teaspoons vanilla
- 1 teaspoon ground cinnamon
- Pinch of salt
Method
- Place all the ingredients into a blender and puree until very smooth.
- Place in the fridge for up to 4 days.
