When I first read this recipe from Maria Emmerich, my first thought was, ‘hmmm… interesting.’

However, I thought I’d give it a go, and happy I did, as it’s surprisingly delicious.

It is an excellent way to get eggs into the kids and keeps in the fridge for up to 4 days, which is great for meal prep. Key tip is to prepare it the day before and let it set in the fridge overnight. This recipe is taken from Maria Emmerich.

 

  • Serves: 5
  • Prep time: 5 minutes
  • Cook time: 5 minutes

Ingredients

  • 10 hard-boiled eggs
  • 1 can coconut milk
  • ½ cup of sweetener such as stevia – I don’t use sweetener, however you can add and adjust to your liking
  • ¼ cup unsweetened cocoa powder
  • 2 teaspoons vanilla
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Method

  1. Place all the ingredients into a blender and puree until very smooth.
  2. Place in the fridge for up to 4 days.
