Who says you can’t enjoy porridge when eating low carb?

This porridge is so creamy and comforting. Switch up the berries to your liking and add whatever toppings you like. I like to prepare a large dry mix and keep it in a container so it is ready to go and I don’t need to prepare it each time I want some.

The milk to dry mix ratio is double. If you have half cup of dry mix, you need 1 cup of milk.

  • Prep time: 5 minutes
  • Cook time: 2 minutes

Ingredients

  • 3 tbsp linseed meal
  • 2 tbsp chia seeds
  • 1 tbsp desiccated coconut
  • 2 tbsp almond meal
  • 1 tbsp coconut flour
  • 1 cup milk
  • ½ tsp cinnanon 

  • ¼ frozen raspberries

  • 3 strawberries

Method

  1. Prepare all dry ingredients in a bowl.
  2. Pour over the milk and stir.
  3. Place it in a microwave for 1-2 minutes then let sit for 3 minutes.
