This is an easy all in one meal full of flavour. You can alter the ingredient list and add/remove what you like.

Ensure your sausages are grass fed and include only meat with herbs and spices.

Many sausages from the supermarket can include nasty fillers, so it pays to check the labels.


  • Serves: 4
  • Prep time: 15 minutes
  • Cook Time: 40 minutes


  • 2 tomatoes
  • ¼ Fennel
  • 1 red capsicum
  • 4 mushrooms
  • 1 red onion
  • 1 bunch broccolini
  • 4-8 grass fed beef sausages
  • Drizzle of extra virgin olive oil
  • Salt and pepper to taste 


  1. Preheat oven to 180 degrees fan forced.
  2. Chop the veggies and spread evenly all over the tray. Ensure the tray is lined with baking paper. Place the sausages on top.
  3. Drizzle with extra virgin olive oil and season with salt and pepper.
  4. Cook for 20 minutes, turn, then cook for a further 20 minutes.
