Cheesecake is one of the simplest and delicious low-carb desserts to prepare. 


  • Serves: 10
  • Prep time: 20 minutes
  • Cook Time: 45 minutes + time in the fridge


  • 2 cups cashew meal (can use almond meal)
  • 50 grams melted butter
  • 500 grams cream cheese
  • 2 eggs
  • 1 tablespoon of stevia (optional)
  • Fresh lemon juice – 1 whole lemon
  • 3 teaspoons vanilla extract
  • 250ml thickened cream 
  • Berries


  1. Preheat the oven to 180 degrees
  2. In a bowl, combine the cashew meal and melted butter
  3. Once the crust is mixed, pour it into a springform pan and spread evenly
  4. Using a mixer, place the cream cheese, vanilla, lemon juice and eggs, and mix the ingredients together until well combined
  5. Pour the mixture into the springform pan on top of the crust and spread evenly
  6. Bake for 40-50 minutes, until the cheesecake is set. Remove from the oven and let cool to room temperature. Place the cake in the fridge for 2 hours to set
  7. After the cake is set in the fridge, whip the cream and spread evenly over the cake
  8. Decorate with berries on top and serve
