Cheesecake is one of the simplest and delicious low-carb desserts to prepare.

Ingredients
- 2 cups cashew meal (can use almond meal)
- 50 grams melted butter
- 500 grams cream cheese
- 2 eggs
- 1 tablespoon of stevia (optional)
- Fresh lemon juice – 1 whole lemon
- 3 teaspoons vanilla extract
- 250ml thickened cream
- Berries
Method
- Preheat the oven to 180 degrees
- In a bowl, combine the cashew meal and melted butter
- Once the crust is mixed, pour it into a springform pan and spread evenly
- Using a mixer, place the cream cheese, vanilla, lemon juice and eggs, and mix the ingredients together until well combined
- Pour the mixture into the springform pan on top of the crust and spread evenly
- Bake for 40-50 minutes, until the cheesecake is set. Remove from the oven and let cool to room temperature. Place the cake in the fridge for 2 hours to set
- After the cake is set in the fridge, whip the cream and spread evenly over the cake
- Decorate with berries on top and serve
